Red yeast rice 红麯米 | 1 tbsp 1 大匙 |
Seasoning 调味料
Oyster sauce 蚝油 | 1 tbsp 1 大匙 |
Soy Sauce 生抽 | 1 tbsp 1 大匙 |
Sugar 糖 | 1 tbsp 1 大匙 |
1. First soak 100g dried mushroom, let it soft, then cut away the stems. Meanwhile, minced the garlic.
预先浸泡香菇,等其变软后,再切掉香菇蒂。同时,亦可以切碎蒜头。
2. Saute minced garlic in a cast iron pot, place roasted pork and mushroom in. Add enough water to cover all ingredients, turn to low heat and stew for 20 minutes.
Then, add 1 tbsp soy sauce, 1 tbsp oyster sauce and 1 tsp salt to stew for another 30 minutes.
预热铸铁锅,爆香蒜蓉后加入烧肉以及香菇。倒入足够盖着食材的水,再转小火焖20分钟。然后,加入一大茶匙生抽,一大汤匙蚝油,一小茶匙盐再继续焖30分钟。
3. Saute 2 tbsp of garlic, add 1 star anise, a cinnamon stick and a ginger. Then, pour in 1500ml water to cook pork leg and 1 tbsp red yeast rice. Seasoning with 2 tbsp soy sauce, half tsp of salt and sugar. Turn to low heat stew until pork leg is soft, then take it out and put aside.
爆香2大汤匙蒜蓉,1朵八角,一支桂皮和一块姜。然后,倒入1500ml水烹煮猪脚和红麯米。用2大茶匙生抽,半茶匙盐和糖调味。转小火煮至猪脚变软后盛起待用。
4. Add in the sea cucumber, fish maw, dried oyster and stew for 10 minutes. Then, add in abalone and wait the soup to boil.
加入海参,鱼漂和蚝干,让其焖10分钟。最好,加入鲍鱼等汤汁沸腾。
5. Take out all the ingredients, add in white radish and let it stew for 20 minutes. After that, add in fried yam, bean curd skin, and vermicelli, turn low heat to stew 15 minutes.
把所有材料盛起,加入白萝卜后再焖20分钟。然后,加入炸好的芋头,腐竹,还有冬粉。转小火再焖15分钟。
6. Heat the cast iron pot, pour in 2 tbsp oil, then saute the minced garlic. Then, slightly grew the prawn until golden brown, add 2 tbsp soy sauce stir fry.
另预热一个铸铁锅,倒入2大茶匙油,爆香蒜蓉。然后加入虾稍微煎至变色后加入2大茶匙生抽调色。
7. Finally, arrange all the ingredients to the pot nicely. Arrange broccoli all around the pot, then it’s ready to serve!
最后,把所有材料排进铸铁锅内。花椰菜围在周围让其美观。即可趁热享用!
